Cuisines of Kerala

 

Kerala cuisines are so diverse and different from the rest of the India that the amazing flavor makes you crazy. Kerala is home to numerous dishes prepared out of seafood like – Crab, Tiger Prawns, King Prawns, Tiny Prawns, Sardines, Mackerel, tuna etc. Kerala is totally surrounding by the sea so the almost sea food are available here. Kerala is known for its rich and generous use of coconut and rice so don’t miss the traditional cuisines of Kerala. The classic recipes from this southern state on the western costal of India have a huge fan following. We are present the some honored dishes of Kerala which have formed the culinary identity of the state.

Puttu and Kadala Curry: Puttu and Kadala Curry is a breakfast staple dish eaten all over the state. As cute as its name Puttu is a cylindrical steamed rice cake cooked with coconut shavings. This is an extremely popular breakfast items of Kerala. This food items is usually served with Kadala curry, a dish of black chickpeas made with shallots, spices and coconut milk, which can also be served with ripe bananas and grated coconut.

Appam with Stew: Appam is a delicious staple dish of Kerala which made from rice flour and coconut milk. It is similar to a thin pancake with crispy edges. If you ask anybody from Kerala what their favorite dish and they will swear by Appam and Stew. It is one of the favorite foods in Kerala. These crepes like bowl are made from rice flour, coconut milk, coconut water and a little sugar. It is usually paired with southern style stew and also the feature mango pieces, vegetables, chicken or lamb. The addition of aromatic whole spices, ginger and fresh coconut milk and the natural flavor of the vegetables.

Idiyappam: It is a favorite breakfast dish of Malayalis which is the combination of Idiyappam and egg curry. Idiyappam is made of rice powder and hot water which is then squeezed down through a mould to created thin mounds of noodles that are steamed. The spicy curry with boiled egg which is a perfect dish of Kerala. It is also known as the noolappam, this dish can be paired with any curry and still taste great.

Nadan Kozhi Varuthathu: It is one of the favorite dishes of Kerala. You can never go wrong with chicken fry. This version of a chicken fry something that is out of this world which is served on a banana leaf, the chicken is fried with onion, garlic, chilli, vinegar, and coriander. The fiery taste of this popular Kerala food dish on your tongue will leave you craving for more.

Kerala Prawn curry: This is a signature dish of the state from Malabar region made with a blend of fenugreek, black mustard and fennel seeds, coconut milk and green chilli. If you rain Kerala don’t miss the prawn curry. The humble coconut notches up the dish to another level on a whole.

Naadam Beef Fry: Nadan Beef is among the most popular Kerala dishes that is either roasted or cooked in thick gravy. Kerala is perhaps the only place in India where you can eat beef. The dish is coated with curry leaves, ginger, garlic, paste, and mustard leaves.

Malabar Parota: It is one of the most favorite street foods originating from Malabar region of the coast. This is crispy and crumbly texture which melts in your mouth and leave behind a sweet yet savoury taste. Parotta is bread made from flour.

Karimeen Pollichathu: This is one of the Kerala most traditional delicious dishes which made out of the pearl spot fish. It is a speckled fish commonly found in the backwater of this Alleppey and Kumarakom. Karimeen Polichathu is originally a Syrian Christian delicacy but has now become part of the rich Kerala Cuisines. This dish is prepared by marinating the fish in a mixture of lemon juice, red chilli, spices and then wrapped and baked in plantain leaves.

Banana Fritters: It is the favorite tea time snacks in Kerala which is the perfect example of simple goodness of Kerala. Ripe banana coated in flour and deep fried in oil.

Banana snacks: Banana snacks are one of the most common snacks found in Kerala throughout the year. The chips are favorites among Malayalis as well as people from outside. These crunchy chips are made from raw plantains which are thinly sliced and left to dry in the sun and after deep fried. It is one of the most popular Tea time snacks in around Kerala.

Palada Payasam: A traditional dessert which is prepared during the festivals like Onam. It is made of rice pudding or kheer which made in almost all across Kerala. It is made out of rice, sugar, milk and ghee. The Special occasion is incomplete without the favorite Payasam.

Sadhya: This is a traditional cuisines of Kerala which is served with rice and 12 -20 dishes in fresh plantain leaf. The most popular festival Oman is incomplete without this traditional meal. This traditional dish contains Kootan, rice, choru, achar, puil, inji, pappadam, pazham, kayyavarathathu, moru and Parippu.

Erissery (Pumpkin and lentil stew): It is one of the traditional kotton in Kerala, filled with healthy ingredients of gram and pumpkin. It is an amazing bland of coconut and other spices along with the vegetables is amazing. It should be savored with hot rice for a better experience.

Thalassery Biryani: The special dish of northernmost town in Kerala with special biryani relishing aroma and taste. It is made of kaima, rice, authentic masala, spices and dry nuts & stuffed meat. This dish is made especially during the celebration of Eid in Malabar region of kerala.

Ada Pradhaman: It is very sweet dessert with spice and nuts. It also the king of Kheers which is a unique blend of thick coconut milk, jaggery and baked rice etc. It is specially served at the end of a sadhya as a dessert.
